Tis' the season for all things pumpkin! You will have to make these Pumpkin Pie Protein Bars for all of your friends and family this Thanksgiving!

✅Oat Crust Layer
1 1/2 cup (100g) quick oats
1 cup (120g) applesauce
1/3 cup (75g) sugar free maple syrup
1 whole egg
2 tbsp (28g) melted coconut oil
1/4 tsp baking soda
1 tsp cinnamon
1 scoop (34g) Macro1 Nutrition ONE Protein, vanilla
✅Pumpkin Pie Layer
1 small can (15oz) pumpkin puree
1/2 cup nonfat, unsweetened, evaporated milk
2 whole eggs
1 tsp vanilla extract
1/2 cup (100g) sweetener
1/2 tbsp pumpkin pie spice
2 scoop (68g) Macro1 Nutrition ONE Protein, vanilla
📝Notes
Please use a whey + casein blend protein like ONE Protein . Pure whey protein will not cook the same.
✅Instructions
- Preheat oven to 350F. Mix together the oat crust layer. Spread into a prepared 5x9 loaf pan and bake for about 10 mins to pre-bake.
- While crust is baking, make pumpkin filling. Whisk together all pumpkin pie filing ingredients in a large bowl. Spread over top of pre-baked oat crust. Place back in the oven and bake for another 25-30 minutes.
- Let completely cool (a few hours or overnight in the fridge) before cutting into bars. Once cooled, cut into 8 bars and enjoy!
