Protein Packed Apple Pie

There is just something about apple pie that I cannot resist. Normally, I am a peanut butter/chocolate/caramel type of guy when it comes to desserts, but a good apple pie always hits the spot. 

I asked some of you guys for some recipe suggestions on Instagram, and you mentioned pie. I figured since I have done a pumpkin pie before I would do an apple pie. And, with the new ONE Protein being released (the best protein for baking!) there was no better time to try my hand at a PROTEIN PACKED APPLE PIE!

🍎🥧Protein Packed Apple Pie🍎🥧

 

✅ Crust

  • 2 scoops (68g) Macro Supps ONE Protein, vanilla flavor
  • ¼ cup + 2 tbsp. (45g) all-purpose flour
  • 2 tbsp (14g) coconut flour
  • Pinch salt
  • 4 tbsp (56g) light butter
  • ¼ cup (56g) plain, nonfat Greek yogurt

✅ Filling

  • 2 large apples, cut into cubes*
  • ½ cup (120mL) sugar-free maple syrup 
  • 2 tbsp corn starch**
  • 2 tbsp warm water (helps mix the corn starch)
  • 1 tsp cinnamon
  • ½ tsp apple pie spice

✅ Crumble Topping

  • 1 scoop (34g) Macro1 ONE Protein, vanilla flavor
  • ½ cup (45g) quick or old fashioned oats
  • 3 tbsp (42g) light butter
  • 1 tbsp (7g) coconut flour
  • 2 tbsp (28g) plain, nonfat Greek yogurt

 

✅ Notes

  • I topped mine with Greek yogurt mixed with some sugar free caramel sauce and a few caramel chips

Instructions

  1. Preheat the oven to 375F. Add all dry crust ingredients (protein powder, flour, coconut flour, and salt) to a large bowl. Add light butter and greek yogurt. Mix together with a fork until incorporated and crumbly. Sprinkle some flour on the counter. Roll out the dough into a large circle about 9-inches in diameter. 
  2. Spray a mini pie dish (about 6-inches in diameter) with nonstick cooking spray. Line the dish with crust and cut excess. 
  3. For the filling, preheat a pan to medium/high heat. Add a little bit of oil/butter to the pan. Mix sugar-free syrup, corn starch, hot water, cinnamon, and apple pie spice in a bowl. Add to the pan. 
  4. Add apples and cook for 5-8 minutes or until they begin to soften. Don’t cook them too much or they will become mushy when you bake the pie. Add apples over top of the crust. 
  5. Bake at 375F for 10 minutes while you make the crumble. For the crumble, mix everything together in a bowl with a fork. After 10 minutes, take out of the oven and sprinkle the crumble over top. Bake for another 10 minutes until the crumble is golden brown. 
  6. Cut into 6 slices and enjoy!
