Ingredients
Oatmeal Layer
½ cup (40g) quick oats 
1 cup water (can also cook in milk if you want)
¼ tsp pumpkin pie spice
1 tbsp (12g) powdered sweetener

Pumpkin Pie Layer
1 scoop (34g) Macro1 Nutrition ONE Protein, vanilla ice cream
½ cup (120g) pumpkin puree

Optional toppings
Whipped cream
Pumpkin pie spice 

How to make the recipe
1. Cook oatmeal according to directions (microwave or stove top). Once cooked, mix in pumpkin pie spice, pinch salt, and powdered sweetener. Place in freezer to cool. 
2. For pumpkin layer, add pumpkin and protein powder to a bowl. Mix until a thick, smooth consistency forms. 
3. Spread pumpkin over top of oatmeal. Place back in fridge for a few hours or overnight to let oats set up and thicken. Once chilled, top with whipped cream and more pumpkin pie spice and enjoy!
